A bain-marie or double boiler is a water bath pot designed to heat foods gradually to a fixed temperature limited by a water bath. It usually consists of a pot that sits snugly into a larger pot which contains water while the little pot contains the dish.

At sea level, this keeps the dish at a maximum of 100 degrees Celsius. A bain-marie can be improvised using a glass bowl in a pot, or even any other smaller pot. They are used to make the custard, melt chocolate, bake cheesecake among others.
